The North East London restaurant and all-round institution, which closed late last year under the guise of taking a longer-than-usual sabbatical, has made a bombshell announcement that it's moving to Shoreditch. Look, we're very sorry for Leytonstone's loss. But, on the upside, the new incarnation of Singburi will be a lot handier for most Londoners to get to.
Singburi 2.0 sees the second generation of the Kularbwong family - namely head chef Sirichai - formally taking over the reins of the restaurant from his parents, who are retiring. And to bring the next iteration of the restaurant to fruition, he's teamed up with two extremely interesting restaurant folk. The first is chef Nick Molyviatis who was the founding head chef at Kiln and helped orchestrate the debut of Oma (Hot Dinners' restaurant of the year for 2024). He and Siri will run the kitchen on a collaborative basis. The third critical team member is Alexander Gkikas, who is co-founder of Holborn's much-vaunted Catalyst Cafe and Roastery.
If you have been under the largest of rocks for the past decade and don't know why this is such a big deal, then let us enlighten you. Singburi is one of London's best Thai restaurants and can be viewed in the same light as places like Mangal II and A Wong, in which the children of the original owners have taken their parents' restaurants to a whole new fanbase. So it's a restaurant that used to be a hidden gem but is now firmly on the city's foodie map.
Now Siri, Nick and Alex are aiming "to distil its essence and reimagine the restaurant for a new chapter...The same, but different". The space they're taking over is in a new build, Montacute Yards, just off Shoreditch High Street. There'll be a central grill with 19 seats around it (expect those to be the must-have spots) along with a further 40 seats in the restaurant.
Dishes on the launch menu will include;
- Dill & lemongrass pork sausage
- Wild ginger chicken thigh
- Prawn & betel leaf southern curry
- Mussels, tomato & sweet basil
- Smoked pork belly & green peppercorn.
And, like the original restaurant, there will be no dessert options.
We've also got details on what the drinks list will be - this is all brand new as in Leyton, there was no drinks licence. There will be 14 wines available by the glass. The cocktail list sounds particularly unmissable, having been curated with Vassilios Kyritsis, the founder of Athens’ The Clumsies and Line, who's promising clarified Bloody Marys, Makrut lime leaf Gimlets, and non-alcoholic Old Fashioneds.
